Ancho-Sweet Potato Bisque

Description
Rich and smoky.
Ingredients
- 2 lb Sweet potatoes or orange-fleshed yams
- 1 Large onion
- 3 clv garlic cloves, minced
- 2 T Ancho chile powder
- 2 t Cayenne or some other kind of hot-making spice
- 1 T Smoked paprika
- Water or stock
- cream
- 4 T oil
Instructions
Chop the onion and garlic, and saute in the oil until the latter is translucent. Peel and chop the sweet potatoes and add them to the pot. Saute everything together for a few minutes, then add the spices, stir, and add water or stock to cover. When the sweet potatoes are very tender, the soup is done. Whizz it up with an immersion blender, check for seasoning, add salt and pepper, and add the cream.
Notes
Honestly, the spice amounts may be off. I didn't write them down when I created this recipe, so I'm really guesstimating. Also, years of smoking and drinking have probably left me with the palate of a rhino, so you may want to add less. Or more. I dunno.
