Description
delicate, crispy and light biscuit
Ingredients
- 100 g flour
- 50 g corn starch
- 5 egg yolks
- 5 egg whites
- 120 g granulated sugar
- 20 g icing sugar
- ds vanilla extract
Instructions
1. combine flour and corn flour and sift the mixture into a bowl
2. beat egg yolks and 1/4 of sugar and vanilla extract till well combined (best use electric mixer)
3. beat egg whites and rest of sugar using electric mixer till stiff
4. combine beaten mixtures gently
5. sift flour again and gradually add to the egg mixture, while mixing gently with a spatula by hand. stop mixing when the flour disappears.
6. preheat oven to 200c
7. pour the mixture into a piping bag; use small pastry tip approx. 10mm
8. prepare a baking tray with parchment paper and make 10cm long fingers or any shape you fancy
9. gently sprinkle the fingers with icing sugar; let them sit for 10min and sprinkle more icing
10. bake the fingers for 10-15min... watch out they burn easily
11. fingers crossed!!
Notes
When I tried for the first time the mixture was a bit too runny and the fingers ended up thinner and the shapes looked organic... Elisha said they looked rustic so I called them Rustic Fingers! If the egg whites are beaten well... and the mixture looks more composed... then they'll turn out to be more like ladyfingers...
