Description
A very flavorful dip. A sweet and spicy alternative to hummus
Ingredients
- 1 large sweet potato
- 1 tsp olive oil
- 1 onion
- 2 garlic
- 1 t grated ginger
- 1 tbsp red curry paste
- 200 g tomato can
- 125 g cooked lentils
- 1 1⁄4 c vegetable stock
Instructions
Steam sweet potato for 15 minutes, set aside and mush it.
In a large pot, fry onion for 3 minutes in olive oil and add garlic, ginger and red curry paste for 1 minute. Add tomato, already-cooked lentils and the stock. Cover and simmer for 30 minutes.
Let it cool, blend it and serve it cold.
Notes
When you cook the lentils for the recipe, cook more than the amount needed and use it the next day in a salad the next day. It's kind of stupid to cook such a small amount.
