Pea and Watercress Puree

Description
Good with fish or chicken!
Ingredients
- 1 c frozen peas
- 1 bn watercress, biggest stems removed
- 2 T butter
- salt and pepper
Instructions
1. Bring a pot of water to boil. When it boils, add the peas. When the pot comes back to the boil, add the watercress, cover the pot, and take it off the heat.
2. Let covered pot sit, off the heat, for five minutes. Drain peas and watercress.
3. Place peas and watercress in food processor or blender with butter and salt and pepper. Puree until smooth. Add more salt or pepper to taste.
Notes
Amount of peas is approximate--if you're cooking for four, imagine you were serving a side of peas to four people: how much would you make? That much.

in my life, i have never heated watercress. it's one of those things i've never done. an experience whose doors i have never opened.
