Description
Homestyle pink beans recipe.
Ingredients
- 1 Can Pink Beans (Pinto or similar)
- 1 onion
- 1 T ground cumin
- 1 T Ground Coriander
- 1 c Orange Juice
- 1 c Pineapple Juice
- 4 clv garlic
Instructions
Chop the onions and garlic and fry in a little olive oil. Drain and add the beans, spices and juice. Simmer for 40 mins or until soft and mushy. Serve with rice.
Notes
I've been messing with this a lot, cayenne or chilli sauce is good, a little chicken stock can work too.

at first i was like "yeah yeah, i made this in college every night" and then you said like two cups of fruit juice and blew my mind
i made this - here's my tweaks -
- i did it from dried beans so i doubled the simmering time
- added a bay leaf
- a little tabasco
- stirred in a spoonful of cream per serving
