Description
I like a little texture to this soup particularly if it's chilly outside, but you can puree it to a fine mist if you want, I can't stop you
Ingredients
- 5 large tomatoes, cored and quartered
- 1 large red bell pepper, seeded, quartered
- 3 medium yellow onions, peeled, quartered
- 5 clv garlic, unpeeled
- 3 pn salt
- 1⁄4 t paprika (smoked if possible)
- 3 dollops extra-virgin olive oil
- 2 1⁄2 c chicken stock, vegetable stock or water
Instructions
Preheat the oven to 375F degrees and position 2 racks in the middle of the oven. Line 2 rimmed baking sheets with parchment paper, alternately you can just rub them down with a thing glaze of olive oil.
Arrange the tomatoes, skin side down, on a baking sheet. Coat the bell pepper and onions with olive oil and put them on the other baking sheet, place the pepper skin side down as well. Give both sheets a light showering of salt.
Bake.
After 15 minute or so, add the garlic to the sheet with the onions and pepper on it.
After another 30 minutes, the tomatoes may start to collapse and the onions start to brown and caramelize. Turn the onions if they start getting overly dark on the bottom. Check on the garlic as well - once the cloves are golden and oozy inside, pull them from the oven.
Peel the garlic, dump all of the roasted vegetables into a big, high-sided bowl, and puree with a hand blender. Alternately, use a conventional blender or food processor and work in batches. Blend in a cup of the stock, and keep adding the rest 1/2 cup at a time until the soup is the desired consistency.
Add the paprika and a bit more salt if needed.

yeah it's out of season, so sue me
you can make a good version of this if you use quality canned tomatoes, though, so i pretend it is never out of season. i like to add more roasted pepper to it when i make something similar, and often use hot hungarian paprika instead of smoked paprika.
