Description
How to make rice PROPERLY
Ingredients
- 1⁄2 c rice
- 1 c cold water
- 1⁄2 t salt
Instructions
OK folks this is how to do it. PAY ATTENTION.
You'll need 1/4 cup to a 1/2 cup of rice per person, depending on how much rice you want to eat.
Put all the rice into the smallest pot that will comfortably accomodate it and the water. You'll need twice as much water as you have rice. Put the water into the pot. OK now. Eventually this is going to boil a little, so make sure there's some space at the top of your pot.
Put the pot on your stove, on top of a burner. Turn the burner on full blast.
THE MOMENT that the water really starts boiling big blorpy bubbles (a "rolling boil"), turn the heat down to its lowest possible setting and PUT A LID ON YOUR POT.
DON'T STIR. This should take 20-30 minutes depending on the type of rice, and how much is in there. Some brown rice might take as long as 40 minutes.
There you go. Perfect rice.
Notes
If you peek, it's fine, but it's better with no peeking. Same for stirring.
Also, if you burn a little on the bottom it's fine - in some countries they fight over that part.

i find that the water amount needed isn't consistent across varieties. brown rice is more of a 2-1 water/rice ratio, whereas short grain, glutinous white rice is like 1.5-1 and white basmati perhaps 1.25-1. just my 2 cents.
ps - i always stir after the rolling boil has been reached. ner.

- boil kettle, meanwhile wash basmati rice under cold tap for approx 1 min to wash off weevils etc
- take small-to-medium pan, fill 2/3rds with boiled water from kettle
- when it's boiling, chuck the rice in, leave off lid etc
- check if its done in 10 mins or so?

ignore ^^, eli is much closer. although i use a little less than x2 of water.
though rice washing is v important too (if you are getting stickiness)
