Marna's Soda Bread

Description
Make a loaf of soda bread in 30 minutes!
Ingredients
- 200 g white flour
- 200 g wholemeal flour
- 1 t bicarb of soda
- 1 t salt
- 1⁄2 pt buttermilk (or soured milk)
Instructions
Preheat yr oven to 180c.
Mix flour, bicarb, salt (raisins if yr using them) in a bowl.
Make a well in the centre.
Pour in the milk, and mix with a fork.
You should have a soft, but not sticky, dough.
Tip onto a floured board, knead for no more than 20 seconds, plop into greased tray/cookie sheet and shape into a round abt 1.5 or 2" thick.
Cut a cross in the centre.
OVEN! For 25-30 minutes, until tapping the bottom of it makes a hollow sound.
Notes
DELISHIS with too much butter om nom nom nom nom. Esp with om nom nom nom French p0nce butter from Borough Market's salt and butter stall.
Also DELISHIS slightly stale and toasted.
Variation: Use all white flour and add a handful of raisins to the flour.
Variation: Do not preheat the oven. Lightly oil a pan instead. Make into a round that is flatter - approx 1" and cut into four pieces. Put the pan on a med/low heat. Put the bits into the pan and cook for 15-ish minutes each side.
1. You want plain regular not-strong, not-self-raising flour.
2. Ideally non-cultured buttermilk, but you might have to make yr own butter to get any of this, now. Sour regular (I have always used full fat) milk by adding a desertspoon of lemon juice. For vegang soda bread, add lemon juice to soya milk. I reckon yoghurt would work but have never tried that one.
