Ingredients

1⁄2Cuppeanut butter
 Pinchpepper flakes or chili powder
1⁄2Tablespoondiced garlic
1Tablespoonsoy sauce
1⁄2Teaspoonsugar
1Poundpasta of choice

Instructions

Boil water, add pasta. While pasta cooks for the next 15, do the following:

PB into mixing bowl. Add remaining ingredients one by one, mixing until smooth. Dump water & allow pasta to cool slightly. Toss pasta & sauce together.

Can be served hot or refrigerated and served cold as pasta salad.

Notes

I've found crunchy pb gives this a cool texture. I've added different meats, chicken or tofu seem to work best, but the no-food-in-the-fridge inspiration keeps the vegetarian version tops in my mind.

The spiciness (and particular spicy ingredient) can be varied to taste, and on brokedown empty-cupboard nights I've been known to just use leftover Dominos Pizza Pepper seasoning, but this stuff is ideal. Hope u dig it!

I make something like this regularly, based on a recipe I found in Vegetarian Times many years ago. For the sauce, I use 1/2 cup of crunchy peanut butter and 1 tbsp rice wine vinegar, 1tbsp soy sauce, 1tbsp water and 1 tbsp honey. If you're using white sugar, you probably want to turn it into a simple syrup first. I sometimes sautee onions and broccoli in sesame oil and throw that in, but the essentials: top dish with a handful of chopped carrots and salted peanuts. It gives it a really nice crunch and mix of flavors!

Also, 1 lb of pasta is A LOT for 3 servings. Typical yield for a 1 lb box of pasta is 8 servings.
