Description
red cabbage, even better the next day cold (also goes with pork v.well)
Ingredients
- 1 red cabbage
- 2 onions
- 4 cooking apples
- 1 bn butter (= a knob)
- 2 tbsp oil (not olive)
- 6 tbsp brown sugar or demerara (or equiv)
- 2 tsp ground cloves
- 2 tsp allspice
- 1 tsp cinnamon
- 1 pn salt
- 6 tbsp vinegar (red wine, balsamic, raspberry, NOT malt)
Instructions
you will need a big pot or a casserole, a sharp knife and a cutting board
1: chop onions teenytiny
2: dice red cabbage
3: segment and core apples (no need to peel), then slice
4: put onions in cooking thing and fry in butter till transparent
5: add cabbage and stir well, till all coated in oil and butter
6: fry a bit more, stirring well
7: add water and vinegar, bring to boil then turn down to simmer
8: add sugar, spices and apple
9: keep on low heat for an hour or more, stirring now and then, till apple has vanished
Notes
quantities of apple, sugar, vinegar and spices in particular should be experimented with, to taste

i made this today, it was great! you should say how much water to add though. i had to guess. i went for two cups - which was too much. a cup, cup and a half would do the trick.
i had no idea what you meant by the apples "disappearing" but now i do!!
