Courgette, Brocoli and Stilton Soup

Description
Cream soup, good hot in the winter or chilled in the summer.
Ingredients
- 1 bn brocoli
- 2 large courgette
- 1⁄4 pt thick double cream
- 125 g stilton cheese, diced
- 1 1⁄2 pt vegetable stock
Instructions
Chop the vegetables up and place in a a saucepan. Cover with stock and bring to the boil; simmer till soft. Blend the soup and then add the cheese. Heat through gently, till the cheese melts then add the cream, stirring to mix. Either serve hot from the pan or chill and serve.
