Description
this is really good for veggies and chicken, but especially good for a quick marinade on seafood steaks (swordfish, shark) or scallops. you can also go straight to the sauce without actually marinading anything in it -- good with fresh lobster or crab, nice over rice with veggies too.
Ingredients

| 1⁄2 | Cup | olive oil |
| 1⁄2 | Cup | dry vermouth |
| 1 | Bunch | chopped fresh cilantro |
| 4 | Tablespoon | soy sauce |
| 3 | Tablespoon | honey |
| 1 | Tablespoon | sriracha (optional) |
| 4 | garlic cloves, crushed | |
| 2 | Tablespoon | good quality dijon mustard |
| 2 | Teaspoon | dried ginger (or 2 tbsp fresh, grated ginger) |
| 3 | Tablespoon | butter |
| fresh ground black pepper |
Instructions
place ingredients up through the ginger into a large mixing bowl and combine. use a food processor or a hand blender to puree to an even consistency.
if you are using as a marinade for chicken or seafood, place meat into bowl with marinade and marinade for 30 minutes. remove meat and grill or saute.
pour marinade into a saucepan and bring to a boil over medium-high heat. reduce heat to medium-low and add the butter, one tablespoon at a time, and integrate into the marinade to create the sauce. do not boil at this point! season to taste with fresh ground pepper.
Notes
please note that the prep time is largely unattended (and if you aren't marinading anything, and are going straight to sauce, it's only about 15 minutes, tops).
