Coconut Jam

Description
It is exactly like it sounds. Delicious as a peanut butter and jam sandwich or added to a bowl of oatmeal (I am a Peace Corps Volunteer in West Africa and eat a lot of oatmeal).
Ingredients

| 2 | Tablespoon | cinnamon |
Instructions
1. Open the coconuts and set the coconut water aside.
2. Scrape off the brown skin of the coconuts and then grate the coconut pieces fairly small (the smaller the pieces, the better).
3. Place the grated coconut pieces into a pot along with the sugar, cinnamon, coconut water and maybe a cup of water (just enough to cover the coconut pieces).
4. Boil and occassionally stir the mixture until it loses most of its water. Test the jam to see if it begins to stick or get a "jelly" type texture (it seems this takes about 30-45 minutes).
5. Boil the jars in empty canning jars and add the hot jam in them carefully. Place the full jars back into the boiling water for maybe 30 seconds and then take them out of the water and place them upside down to seal the jars closed.
