what do you use besides garlic, and uhh.. stuff?

For a good jerk recipe, as passed to me by my bud Pete Chan who chefed down in Jamaica for a time:

For each robotcoupe/cuisinearte/food processor/blender worth

1 bunch Booker T Green Onions
4 cloves garlic
3 scotch bonnets or Habaneros
1 small bunch of thyme (don't bother picking just throw the whole damn thing in)
1 cup soy sauce
2.5 cup veg oil blend

Blend it all up and soak desired protein at least a day

Granted not far from pickapeppa but you can tweek it as you wish and it's a heck of a bunch better anywho

Far from picckapeppa sauce but the Cuban Pernil marinade for pork is great. You need garlic pushed into the joint and a bath of orange juice, the bitterer the better, olive oil, thyme and oregano.
